
When you've finished cooking, remove the Dual Function Metal Top and replace it with the Ceramic Snuffer Cap. This will snuff out the oxygen and extinguish the fire.
Close the bottom draft door. Place the Dual Function Metal Top inside the EGG or inside your garage. Don't leave it exposed to the rain or heavy moisture. This goes for the Cast Iron Searing Grid, Dutch Oven and any cast iron products, not just ours.
Over time, your cap should become seasoned with the grease particles in the smoke from cooking — just like an iron skillet is seasoned with natural fats and oils. This grease will naturally help prevent rust and will lubricate the movement of the adjustable Daisy Wheel. Should rust spots form early on, or after non-use over winter, use a light wire wool to remove the rust and rub with a rapeseed oil. Alternatively cooking high-fat burgers or sausages will help will help re-season it.
Should the Daisy Wheel become stuck together in cold weather, pop it in the oven on a low heat, which will loosen the grease and it will become mobile once more.
Our recommendation, though: get a rEGGulator. It's easier to look after, and improves on the DFMT in almost every way!
